COMMENT

Initially, I often dehydrated ingredients myself and took samples to the mountains. Hiking long trails and camping in tents, I continuously adjusted the recipe through on-site tasting.

In the past, I only focused on mountains above the tree line, but recently I've also grown fond of hiking in low-altitude peaks and forests. In these places, I find that flavors that bring comfort to the body are more memorable than overly fancy ones.

Through repeated trials, I discovered that a tired body craves more than just simple saltiness. The sweet and sour taste of tomatoes, and the umami of the glutamic acid they contain, are very important. When Japanese elements like pickled plums, perilla, and bonito flakes are added, it creates a surprisingly soothing taste. I also love the aroma that wafts out after pouring in hot water. In hot weather, you can rehydrate it with water while walking and eat it directly once rehydrated. In the mountains, convenience is paramount, a fact I've repeatedly confirmed through field research.

Therefore, I finally decided on Japanese sour mashed potatoes. While not flashy, I believe it's a taste you'll want to savor again and again.
