A rich spice masala sauce, layered with juicy tomatoes, resembles a crimson mountain, and topped with soya meat, onions, and Himalayan salt, like volcanic gravel/rock. This vegan minced meat curry is complex and has a lingering aftertaste.
The chef came up with the idea of "eating food that feels like the heartbeat of the earth" while in the crater of the erupting Mt.
We created "Volcano Minced Pork Curry." Please enjoy this vibrant, hot dish. You can also add dried vegetables to your liking for a colorful vegetable curry.
COMMENT
The first peak that really moved me was looking towards Gun Mountain from the Changyue Ridge.
It felt like standing on the vibrant "backbone" of the Earth—as if approaching the universe, as sounds faded and the world became abstract. I incorporated this feeling into MGL's first dish, "Chicken and Maitake Sherry Stew."
Meanwhile, as I hiked up volcanoes like Adachitara, Kokonoe, and Iotake, I truly felt that this planet is still vibrant. The steam rising from the earth, the scent of sulfur, the pulsating heart of the volcano—it's not a cosmic experience, but a planetary one. I wanted to express this "active volcano" through flavor, and that's what I wanted to convey with this volcanic minced meat curry. It exudes the aroma of the volcano, bursts with rich spices, and oozes with vitality. Please be sure to savor this dish in the mountains and feel the vitality of the Earth.
