Sherry-infused Chicken and Maitake Risotto

Chef Tajima of MGL was deeply impressed by the deliciousness of "Coq au Vin Jaune" (chicken stewed in yellow wine) in the Jura region of France, and has never forgotten it. This dish is an adaptation using local Japanese ingredients.
The delicious broth from the maitake mushrooms and the savory flavor of the Choshu chicken complement the rich, acidic sherry perfectly. This dish is inspired by the majestic mountains of the Northern Alps and the mineral-rich soil of the Jura region.

Bamboo Shoot and Tangerine Green Curry Rice

This simple and delicious green curry is based on bamboo shoots and minced pork, and garnished with Nagato Yukichi, an aromatic citrus fruit from Yamaguchi Prefecture, similar to lime and yuzu. Nagato Yukichi uses large pieces of the ingredient and is carefully crafted so that the taste and texture change with every bite, making it both delicious and delightful.
